Whole grains are not only delicious and filling, they contain fiber, B vitamins, protein, and minerals that help us thrive! Check out our Great Grains series on Facebook and Instagram to learn about grains that may be new to you and get inspired with creative recipes. In today’s post you’ll find Turkish Bulgur Salad with a plant-powered Tzatziki Sauce.
Last month, we featured this simple millet recipe, courtesy of Vivian Lee, Culinary Empowerment Coordinator. And yes, this recipe tastes as good as it sounds.
Base Ingredients
3 cups millet, cooked
1 cup fresh or frozen corn
1 cup fresh or frozen peas
½ tangerine, peeled
A few sprigs of cilantro or preferred herb for garnish
Dressing Ingredients
5-6 tangerines, juice squeezed
¼ cup vinegar
¼ tsp dijon mustard
1 small garlic clove, minced
Black pepper to taste
For the millet base:
1.
Rinse 1 cup of millet and strain with a fine-mesh strainer. Cook in a pot with 2 cups of water until boiling. Simmer over low heat for 15 minutes with the lid on. Remove from heat and cool for 10 minutes with the lid on. Transfer to a large bowl and fluff with a fork.

If using frozen vegetables, allow them to thaw first. Combine corn and peas with cooked millet.

Transfer to a serving plate. Add tangerine pieces on top. Garnish with cilantro or preferred herb.
For the dressing:
1.
Whisk together tangerine juice, vinegar, and mustard. Mix in garlic and black pepper afterwards.

Drizzle the dressing over the millet. Enjoy!

Earlier this month, Chef Rebecca Johnson, PPMNY Culinary Organizer, demonstrated collard green wraps with island spices and a creamy sunflower seed dressing as part of our patient wellness cooking class at NYC Health + Hospitals/Kings County. Staff member Yesenia King, CM, (right) happily took part in the taste testing.
Last Thursday, more than 70 participants kicked off their plant-based journey with our fall jumpstart! We can’t wait to hear how they feel after fueling their bodies with wholesome plants for 21 days.
On Saturday, vegetables were sliced and shredded in preparation for collard green wraps. Chef Rebecca Johnson, Elaine Perlman, and Sergio Villavicencio were on hand to help folks pull the dish together at Harlem Grown’s 127th Street farm.
