Spring has sprung, and that means spring vegetables like asparagus and even wild ramps (in the same plant family as onions and garlic) are available at markets around the region. Try this hearty whole-grain dish:
Barley with Spring Vegetables
Ingredients
1 cup hulled barley
3 cups low-sodium vegetable broth (or homemade: boil your veggie scraps and strain!)
2 garlic cloves, minced
1 cup broccoli rabe, chopped (or other seasonal greens)
4-5 asparagus stalks, diced
1/2 cup frozen or fresh peas
4 scallions, thinly sliced
Instructions:
In a medium pot, bring the vegetable broth to a boil. Add the barley, reduce the heat to low and cook for 50-55 minutes or until the barley is tender. Pour off any excess liquid if needed. Set aside to let it cool.
While it’s boiling, prepare the vegetables. In a separate pan, sauté garlic (and thinly sliced wild ramps, if available) in a splash of water until fragrant.
Add broccoli rabe and asparagus, and cook for 3-4 minutes on medium heat. Add peas in the last minute of cooking.
In a mixing bowl, combine barley and vegetables. Mix evenly, adding scallions at the end.

Additional drinks or dishes may be purchased separately off the menu. Please note that, while all dishes for our group will be free of animal foods and oils, some dishes will contain salt, and the cake has added sugar.

It’s National Salad Month! Hop into our Facebook groups — in English or Español — to participate in a month of salad sharing. Healthy food isn’t always rabbit food, but we do love the diverse and flavorful combinations of plant-powered salads.
We’re challenging our community to eat a salad each day throughout May because it’s just so good for us. Share your salad photos, non-traditional recipes, oil-free salad dressings, and anything else you’d like, using the hashtag #NationalSaladMonth (or #NationalSaladMes) and #PlantPoweredMetroNY. Six comedians took the stage at last night’s comedy show fundraiser at Stand Up NY, making us laugh out loud, tear up, and sometimes cringe! Community members enjoyed the bar and our mocktail menu, including a virgin juice blend we dubbed the “Mayor’s Punch,” as well as satisfying plant-powered finger foods catered by Chef Brandy Cochrane of Plant Candy.
